Honey Balsamic Salmon

Only FOUR Ingredients

1cup Balsamic vinegar

4 TBL Honey

4 Cloves Crushed Garlic

Instructions

Boil medium heat and reduce until it coats the back of a spoon

Season Salmon with Garlic salt, Pepper, & Onion

Powder with Paprika

Brush Balsamic glaze over salmon

Grill salmon

This was incredibly delicious. I think it would also be fantastic on grilled shrimp skewers or baked-on chicken.

So simple, so Ono!!!!


Ahi Coconut Curry

We’ve been on a roll with the fresh ahi and tried this new recipe for the first time! We had everything except cucumber which we have actually never cooked before but sounded interesting.

Super simple, fast, & healthy. I added Pink Pickled ginger to mine, SO delish!

Ingredients

3 Tablespoons coconut oil

1 medium onion, chopped

1 teaspoon ginger, grated

2 cloves garlic, minced

2 Thai bird chili peppers

1 Tablespoon curry powder

1 14 oz. can coconut milk

4 scallions, chopped

1 cucumber peeled, seeded, & cut lengthwise, julienne style

4 Tablespoons soy sauce

1 lb tuna steaks, raw cut into cubes

Instructions

Heat up the coconut oil in a wok or skillet.

Cook the onions over medium-high heat until translucent, about 5 minutes.

Add in the ginger, garlic, red chilies, & curry powder, reduce heat and cook until fragrant.

Stir in the coconut milk, green onion, and cucumber.

Add in the soy sauce and stir to combine.

Add in the tuna cubes and cook until desired preference. Do not overcook!

Serve with coconut rice or regular steamed rice.


Winner, winner ahi dinner!

This inspiration came from a desire to “swag up” some fresh Ahi.

Peter and I both used to work at Pacific Cafe. We learned so much about how to make delicious food running those plates!

Start with some ahi, cut it up and roll it in chopped macadamia nuts.

Pair it with white wine, ginger Burrblanc!

A Burrblanc is basically white wine reduced with a “shunk-load” of butter, cream, fresh ginger, lime and a bit of sugar to taste.

Cajun spice seared on Ahi is also a family favorite, so we did that.

So simple and so delicious.

I served up a platter full of options that we all created our own mini sushi bowls and wraps with.

Easy, fun, & major yum.

Use the Burrblanc for dipping (a little goes a long way.) Have fun playing with your favorite ingredients.

I love the Ahi Nori wrap from Mermaids in Kapaa town. I have cheated and made my own version by buying a few sides of their signature Wasabi sauce and then made my own at home!
